About the Young Mind FoodLab
Young Minds FoodLab is a concept that develops and tests learning & workstations for Food, Science and Digital education in primary school. Together with schools, teachers, students and educational consultants, we develop smart solutions to current food challenges with a direct connection to sustainable development goals. The program intends to develop both the technology and the didactics and at the same time to function as a laboratory with STEM (Science, Technology, Engineering & Mathematics) teaching concepts.
Team
Bent is the architect behind the FoodScape Lab that was developed as an integral part of the teaching at Integrated Food Studies (IFS) at Aalborg University in Copenhagen from 2012 and on. The lab soon showed its potentials for the teaching of a wide range of subjects related to sustainable food systems transformation. Not only at doctoral and graduate level – but also as a part of the bridge-building and matchmaking to elementary school that was part of the research and education at the lab. This track was further developed and the concept was coined the Young Mind FoodLab (YouMiLa).
Bent is a Professor at University of Copenhagen at the section of Landscape & Architecture at the Department of Geosciences and Natural Resource Management. His research is on urban food and farming strategies, urban food systems tranformation and sustainable public food systems. An important part of this research is on learning and change strategies including systemically oriented learning strategies for young people.
Bent is the principal investigator on several research projects including the SoL community food program, the UMAGE project on science & digital based tech solutions for food waste mitigation, the International Network Programme SELEA21 on 21st century skills based solutions for food education and the SESAM2020 EU-MSCA Night program on Sense, Science and the magic of Food.

Mukti is also one of the important person behind the concept of the Young Mind FoodLab
He have huge passion for concept development within sustainable gastronomy (such as; food waste, local ingredient, guest experience). He have been involving to promote healthier eating behaviour based on behaviour change theories.
Mukti also focusing on area of Data Science and Machine Learning (AI) to understand the challenges and opportunities with Food and Nutrition area.
